YUM!

I got a butternut squash with my farmshare this past week. I found a recipe on allrecipes.com for Garlicky Baked Butternut Squash oh my goodness it was good, and super easy. HH and I gobbled it down for dinner. Here's the recipe:

INGREDIENTS

  • 2 tablespoons minced fresh parsley
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 3 1/2 pounds butternut squash, peeled and cut into 1-inch cubes
  • 1/3 cup grated Parmesan cheese

DIRECTIONS

  1. In a large bowl, combine the parsley, oil, garlic, salt and pepper. Add squash and toss to coat.
  2. Transfer to an ungreased shallow 2-qt. baking dish. Bake, uncovered, at 400 degrees F for 50-55 minutes or until squash is just tender.
*I cooked for 45 mins, and it was perfect...and the recipe leaves out what to do with the cheese, so I added it at the end.

And in other fun news.....I have a gutted, but not skinned squirrel in my deep freeze. It is guarding my breast milk I guess : )
